The Director of Restaurant & Bars will be responsible for all aspects of the day-to-day food and beverage operations with direct oversight of the entire guest experience with a strong focus on front of house operation. This position will work with the Executive Chef(s) to ensure a positive guest experience exceeding expectations.  The successful candidate will have a strong floor presence, engaging personality and strong leadership skills. The Director is also responsible for budgeting, purchasing, hiring, training and systems/procedures within the front of house food and beverage operations related to restaurant and nightlife operations.


  • Achievement of budgeted food sales, beverage sales, labor costs and profitability.

  • Completion of guest follow-up calls on a timely basis.
  • Timely analysis of food & beverage prices in relation to competition.
  • Participation and input towards F&B marketing activities.
  • Competitive analysis every six months by calling competition and gathering data such as banquet kits, room rental rates, etc.
  • Development and maintenance of all department control procedures.
  • Handle all food & beverage inquiries and ensure timely follow up.
  • Confirm all details relative to group functions with meeting/banquet planners.
  • Supervision of daily paper flow including proposals, and function contracts.
  • Completion of monthly forecast.
  • Attendance and participation at weekly F & B meeting and department head meeting.
  • Assist in menu planning and pricing.
  • Development and maintenance of department manual.
  • Supervision of weekly payroll input.
  • Be available to hotel staff at all times in case of emergency.
  • Must have a complete knowledge of fire and life safety procedures.
  • Participation in manager on duty shifts as required.
  • Assure bar inventory for functions, including opening and closing inventories, accurate bar summaries and cash deposits are prepared.
  • Assure the maintenance of bar control policies.
  • Develop weekly work schedule and shift duties while maintaining a budgeted labor cost.
  • Assuring adequate and consistent completion of monthly inventory.
  • Assure timely completion of function bills.
  • Assure the ordering and purchasing of beer, wine, liquor, premix canisters and canned soft for Food & Beverage and vending.
  • Liaise on an on-going basis with the sales and marketing departments to ensure all client needs and requirements will be met.
  • Ensure a professional attitude and proper business attire when on property.
  • Responsible for staff hiring, training and development.
  • Conduct department meetings on regular basis. General Manager and Human Resources to be notified of meetings in a timely fashion.



  • A minimum of five years of full service, high quality resort, or hotel experience in a level leadership position within a Restaurant and/or Bar operation.
  • Experience with beverage control; supplier relations, inventory, pricing, menu development.
  • An energetic, outgoing, professional personality
  • Demonstrated leadership skills with success in developing team members
  • Ability to train, lead, build a team and motivate staff
  • Proven success in guest satisfaction, revenue generation, employee development, menu planning and event execution
  • Multi-unit management preferred
