Featuring the dynamic pairing of Master Sushi Chef Katsuya Uechi and design impresario Philippe Starck, Katsuya by Starck is truly a feast for the senses. Assists Executive Chef with the daily operations and organization of the restaurant

Reports directly to the Executive Chef/Chef de Cuisine/Sr. Sous Chef



  • Exhibits culinary talents by personally performing tasks while leading the staff and managing all food related functions
  • Role models company quality standards and service and fully supportive of and cognizant of all corporate programs


  • Supervises and carries out the correct procedure of preparation, presentation and portion control for all raw and cooked foods in accordance with the menu with adequate pars required for efficient service
  • Supervises all kitchen areas to ensure a consistent, high quality product is produced- daily line checks and quality control


  • Maintains all product costs associated with the kitchen operations within developed budget guidelines by ensuring accuracy in ordering, receiving, security and inventory of all company property
  • Completes daily produce, meat, seafood and dairy orders according to consumption and performs weekly food inventory
  • Monitors food shipments to ensure they meet established purchasing specifications

Budget & Planning

  • Works with the Executive Sous Chef and Sr. Sous Chef to establish result oriented objectives for the kitchen as well as personal objectives in regards to professional development
  • Ensures the profitability and successful operation of the kitchen
  • Controls direct labor costs associated wit the kitchen staff-creates weekly schedules, ensuring productivity levels are maximized through the effective utilization of all colleagues and providing hands-on support as required
  • Ensures full compliance to company operating controls and seeds innovative ways to improve performance on a regular basis

Human Resources

  • Ensures each section in the kitchen is running efficiently & effectively at all times & all staff in the department adheres to   house rules as outlined in the employee handbook
  • Carries out new team member induction & training, ensuring they understand their position, responsibilities and the high standard that is expected
  • Performs ongoing training and support to develop and maintain a motivated kitchen team, documenting sessions & assessing staff progress with regular appraisal & one to one discussion

Facilities, Sanitation & safety

  • Understand and enforces federal, state and local food sanitation regulations
  • Ensures that all kitchen equipment and facilities are in good working order and is properly maintained


  • Current with culinary concepts, practices, and procedures and active in furthering of his/her own culinary development
  • Extremely creative and a demonstrated ability to energize a diverse team of culinary professionals
  • Previous experience in high volume restaurant operations
  • Developed leadership and managerial skills supporting an environment of colleague growth and development, interdepartmental teamwork
  • Knowledge of applicable food and beverage controll systems
  • Clear concise written and verbal communication skilss in English
  • Must have excellent organizational an administrative skills
  • Proficient in MS Word,Excel, company communication technology
