    Sushi and Beyond                                                       

     

    Featuring the dynamic pairing of Master Sushi Chef Katsuya Uechi and design impresario Philippe Starck, Katsuya by Starck is truly a feast for the senses. With specialty cocktails, unique rolls and spectacular sushi and sashimi platters, Chef Uechi skillfully translates Japanese flavors to the American palate. Signature dishes include Crispy Rice with Spicy Tuna, Yellowtail Sashimi with Jalapeño and Miso-Marinated Black Cod. With superb talent and exacting precision, Katsuya by Starck is changing the face of Japanese cuisine.

     

                         

     

    Responsibilities

     

     

     

    Focus is on, but not limited to the following:

    • Has a passion for the craft and everything in the industry!

    • Must be excited about change and an evolving environment
    • Cut and prepare fish
    • Consistently maintaining a high      degree of cleanliness and organization with appearance, throughout      preparation area, and sushi bar
    • Managing temperature controls      with coolers and sushi counter tops
    • Follows the appropriate methods of food preparation, cooking, sizing of portions, mixing of sauces and garnishing foods to ensure that dishes are prepared in the appropriate manner
    • Evaluates cooked foods before serving them for quality flavors and appearance
    • Stir-fries, roasts, boils, steams and fries meat, fish, vegetables, noodles and other food items from the menu
    • Maintains a solid knowledge of all food products and is able to skillfully apply culinary techniques
    • Identifies and safely uses all kitchen equipment
    • Regularly restocks all kitchen supplies and food items required for service
    • Properly labels and dates all products to ensure safekeeping and sanitation
    • Applies basic knife skills required for service
    • Reads, measures, and executes recipes
    • Maintains a solid menu knowledge and attention to detail with plate presentation
    • Able to versatile with hot and cold items
    • Exhibits a solid knowledge, understanding and application of various cooking techniques
    • Maintains a solid knowledge, understand and preparation of base sauces, stocks and soups
    • Works as a team, assisting with all needs and inquiries
    • Effectively communicates with management and Chefs
    • Performs other job related duties as assigned

     

    Qualifications

     

    * Strong knife skills, experience working with fish butchery a plus

    * Open Availability

    * Highly organized with excellent follow up skills and extreme attention to detail

    * Understanding of a "sense of urgency" attitude for the completion of responsibilities/tasks

    * Ability to work in a deadline driven, fast-paced, high pressure environment

    * Previous experience cooking in a high volume scratch kitchen

    * Dedicated and willing to go above and beyond

    * Exceptional communication skills and articulation
